PEANUT ROASTING








Introduction


Peanuts are seeds pods that ripen below the surface of the soil. They are herbaceous plants grown for its seeds, which are valuable as food and as source of oil. They are called goober and groundnut. The plant, from 10 to 12 inches in height has hairy, branching stems, each with two

pairs of leaflets and yellow flowers which resemble those of the pea. The flowers are borne near the ground, and as they develop, the young fruits, which are pods are carried into ther soil and ripen underground. Each pod contains one to three edible seeds. The pods do not split open when mature.

Native peanuts are commnoly and widely grown in the nearby and far-flung barrios. They grow healthier and give more seed pods in soil mixed with little sand.

In this presentation, native peanut is the only ingredient used and this can be found in Jimalalud, Tayasan, Guihulngan, Bais City and other places in the province of Negros Oriental, Philippines.

Materials used in Removing the Shell:
peanut cracker
trash box

basin - white only winnowing basket - oval
winnowing basket - round

Steps in Removing the Shell:


1. Remove the shell of the peanut using the peanut cracker. Avoid breaking the peanut.

2. Select the good seeds from the decayed or moldy peanut.

3. Winnow and clean very well.

Materials Needed in Roasting:

vat
ladle - wooden

winnowing basket - oval and round
plate - glass
charcoal made of wood


How to Prepare:


1. Heat the vat with moderate fire using charcoal made of wood.
2. Pour the peanut into the vat and immediately start to stir. Maintain a moderate fire and
uniform stroke in order to avoid over-cooking.
3. Taste the peanut if it is cooked and crunchy. Use the plate in tasting.
4. As soon as it is cooked and the skin becomes brown, remove from fire and continue stirring.
5. Remove the brown skin carefully avoid breaking the peanut.
6. Winnow slowly and strain using the round winnowing basket.
